Acai tart + first post!

Hello friends and welcome to my blog  ☮ ✌ I''ve been thinking about creating a blog for a while now and it's finally happening! I figured the best way to start this off was with one of my favourite recipes - a raw vegan acai tart.
There are two options for the tart filling depending on which form of acai you have the easiest access to and both are super simple (and delicious).


Super simple raw acai tarts
Serves 2 x 10cm tart cases

ingredients:
almond chocolate crust:
  §  2/3 cup ground almonds (can use any nut)
  §  5 medjool dates
  §  1/4 cup cacao powder
  §  1 teaspoon vanilla
Acai filling (option 1):
  §  1 cup cashews
  §  ¼ cup apple juice
  §  ¼ cup Amazonia acai powder
  §  2 dates (optional)
Acai filling (option 2):
  §  3 x Amazonia acai ‘energiser’ frozen smoothie packs



directions:
if using option 1 soak cashews for 15-30 minutes
place all crust ingredients into a blender or food processor and blend until combined – the crust should be just starting to stick together. Scoop the crust mix into a cheesecake pan and press down to form the base.
using option 1 or 2 put all ingredients into a blender and blender until the mixture is smooth and creamy  - you may have to scrape down the sides a few times
once filling is blended begin scooping it into the cheesecake pans and then place them in the freezer to set before removing

optional: top with rose petals, granola, cacao nibs, blueberries, nuts etc. – anything that takes your fancy!
